Ingredients of Jalebi (सामग्री)

  • 2 cup Maida
  • 1 cup dahi
  • Pani
  • Oil or ghee for fry
  • For Sugar Syrup (chashni)
  • 1 cup chinni
  • 1/2cup pani
  • 1/2 spoon baking soda
  • Elaichi powder 1/2 spoon
  • Kesar a pinch
  • Barik Kate hue pista 1 spoon (optional)

Recipe of Jalebi (विधि)

  • Sbse phle jalebi ka batter ke liye 1 bowl mein maida, baking soda aur dahi dal kr ache se mix krein. Ye batter mein thoda pani dalein aur batter bnaiye.
  • Dhyan rhe batter na jyada patla ho na hi thick. Ab ise 1 ghante ke liye dhk kr rkh de.
  • 1 ghante bad phle aap ek pan mein sugar syrup ( chashni) ke liye 1 cup chinni aur 1/2cup pani dal de aur gas pr garam hone ke liye rkhe.
  • Ise ek spatula ki help se chalate rhe aur jb chinni dissolve ho jaye to gas slow kr de aur 5 se 7 minute tk pkne de aur ek tar ki chashni bnani hai.
  • Dusri tarf batter ko ek cone mein ya kisi bhi khali milk packet ka cone bnaiye aur usme dalein. Cone mein niche se bilkul choti si hole kr de scissor ki help se.
  • Ab ek kadai mein ghee ya oil jisme bhi aap jalebi bnana chahte hai garam krein.
  • Oil garam hone ke bad cone se batter usme dalein aur jalebi ki shape dete rhe.
  • Phir ise dono tarf se fry krein.
  • Sath hi ek tar ki chashni mein pissi elaichi powder aur kesar dal de aur mix krein.
  • Ab jalebi fry hone ke bad sath hi chashni mein dalein aur 5 minute mein jalebi nikal de.
  • Garma garam jalebi tyar hai.
  • Ise aap barik Kate hue pista se garnish krein aur serve krein.

  • Sbse phle ek bdi nonstick kadai mein dhudh dalein aur boil krein.
  • Jb dudh mein boil aa jaye to gas slow kr de aur dudh ko pkne de.
  • Boil hone pr jo Malai ati hai use spoon ki help se nikal kr bowl mein rkhe.
  • Kadai ke dudh ko boil krte rhe aur kadchi ki help se hilate rhe so that ye kadai ke tle pr na LG jaye. Boil hote time jo bhi Malai ki parat ati gai use nikal kr bowl mein rkhte rhe, Isla use bad mein krte hai.
  • Jb dudh 1/3 rh jaye tb isme chinni, kesar air pissi elaichi dal de aur sath hi barik Kate hue badam bhi dal de.
  • Ab jo Malai ek bowl mein rkhe hai wo bhi isi rabri mein dale aur halke hath se mix krein.
